Chocolate Waffles with Peanut Butter and Caramelized Bananas

The flavors of chocolate, peanut butter and bananas come together quickly for this wickedly decadent breakfast or dessert. Add a scoop of vanilla ice cream to send it over-the-top.

Chocolate Waffles

  • 2 eggs
  • 2 cups milk
  • ½ cup (1 stick) Challenge Butter, melted
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 4 teaspoons baking powder
  • 1 Tablespoon sugar
  • ½ teaspoon salt

Caramelized Bananas

  • 4 ripe bananas, not overripe, sliced
  • 2 Tablespoons Challenge Butter
  • ⅓ cup brown sugar


  • peanut butter
  • powdered sugar (optional)


Chocolate Waffles

    Preheat waffle iron.

    For waffles, combine all wet ingredients in a small bowl. Combine all dry ingredients in medium bowl. Pour wet ingredients into bowl with dry ingredients and mix together.

    Pour waffle batter onto center of hot waffle iron and bake about 5 minutes.

Caramelized Bananas

  • 4

    For Caramelized Bananas, melt butter in medium skillet over medium heat.

    Add brown sugar and bananas.

    Carefully stir until the brown sugar melts and the sauce thickens, about 3-5 minutes. Remove from the heat.

    Remove waffles carefully and top with peanut butter and caramelized bananas. Serve immediately.
