Chocolate Waffles with Peanut Butter and Caramelized Bananas
The flavors of chocolate, peanut butter and bananas come together quickly for this wickedly decadent breakfast or dessert. Add a scoop of vanilla ice cream to send it over-the-top.
- 2 eggs
- 2 cups milk
- ½ cup (1 stick) Challenge Butter, melted
- 2 cups all-purpose flour
- ½ cup cocoa powder
- 4 teaspoons baking powder
- 1 Tablespoon sugar
- ½ teaspoon salt
- 4 ripe bananas, not overripe, sliced
- 2 Tablespoons Challenge Dairy Butter
- ⅓ cup brown sugar
- peanut butter
- powdered sugar, optional
1Preheat waffle iron.
2For waffles, combine all wet ingredients in a small bowl. Combine all dry ingredients in medium bowl. Pour wet ingredients into bowl with dry ingredients and mix together.
3Pour waffle batter onto center of hot waffle iron and bake about 5 minutes.
1For Caramelized Bananas, melt butter in medium skillet over medium heat.
2Add brown sugar and bananas.
3Carefully stir until the brown sugar melts and the sauce thickens, about 3-5 minutes. Remove from the heat.
4Remove waffles carefully and top with peanut butter and caramelized bananas. Serve immediately.
