BBQ Brisket Sliders with Avocado and Red Onion

  • ¼ cup brown sugar
  • 1 Tablespoon paprika powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 2 pounds beef brisket
  • 2 cups beef stock
  • 1 cup barbeque sauce
  • 1 package (12-count) King’s Hawaiian Savory Butter Rolls
  • ½ Tablespoon Challenge Lactose Free Butter
  • 3-4 avocados, sliced
  • ½ cup thinly sliced red onion

    Preheat oven to 350°F. In a small bowl, combine sugar, paprika, onion powder, garlic powder, salt and pepper. Rub all over both sides of the brisket and place in a cast iron pan or small roasting pan. Roast, uncovered, for 1 hour.

    Add beef stock and enough water to bring the amount of liquid halfway up the side of the meat. Lower oven to 300°F, cover pan tightly with foil and continue cooking for 3-3 ½ hours, or until fork-tender.

    Let rest for 15 minutes, then transfer meat to a cutting board and slice against the grain in 2-inch strips. Transfer to a large bowl, shred with 2 forks and toss with ½ cup of the cooking liquid and barbecue sauce.

    To assemble sliders, split King’s Hawaiian Savory Butter Rolls in half and spread Challenge Spreadable Butter on both cut sides of the bun. Layer bottom bun with a few slices of avocado, a generous pile of brisket, and 2-3 red onion slices. Top with slider bun and serve.
