White Truffle Beurre Blanc

Ingredients
- 1 cup (2 sticks) Challenge Unsalted Butter
- 1½ cups white wine
- ½ cup sherry
- 1 oz. shallots
- ½ oz. garlic
- 1 bay leaf
- 1 Teaspoon thyme
- 2 cups cream
- 1 Tablespoon white truffle oil
- ½ oz. black truffle shavings
Directions

1Reduce wine, sherry, shallots, garlic, bay leaf, thyme by ¾. Add cream and reduce by ½. Add truffles; whisk in butter and truffle oil. Salt and pepper to taste.
