Ingredients

  • 2 (6 ounces each) chicken breast
  • ½ cup Italian dressing
  • 6 cups Italian mixed greens
  • ¼ cup tomato, ½-inch dice
  • ¼ cup red onion, ½-inch dice
  • 2 Tablespoons bacon, cooked, ½-inch pieces
  • 2 Tablespoons black olive, sliced
  • ½ cup balsamic vinaigrette
  • 1 Tablespoon Bleu cheese crumbles
  • ½ cup Mrs. Cubbison’s Garlic & Butter Focaccia Croutons

    Marinate chicken in Italian dressing for two hours; remove from marinade. Grill until internal temperature of chicken reaches 165°F; slice into ¼-inch pieces.
