Waffles with Bourbon-Glazed Ham and Pears
If you wind up with leftover ham from a major holiday, plan to repurpose it the next morning with this complex, elegant breakfast dish. The salt of the ham plays deliciously with the sweet of the bourbon glaze and the pears. Be sure to get your pears in season for peak flavor.

Waffles
- 2 eggs, beaten
- 1 3/4 cups milk
- ½ cup (1 stick) Challenge Butter, melted
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 Tablespoon sugar
- ½ teaspoon salt
Bourbon-Glazed Ham and Pears
- 8 thick slices of ham or canadian bacon
- 2 ripe pears, peeled, cored and sliced in eighths
- 2 Tablespoons Challenge Dairy Butter
- ¼ cup bourbon
- ¼ cup brown sugar

1Preheat waffle iron.

2For waffles, combine all wet ingredients in a small bowl. Combine all dry ingredients in medium bowl. Pour wet ingredients into bowl with dry ingredients and mix together.

3Pour batter onto center of hot waffle iron and bake about 5 minutes.
Bourbon-Glazed Ham and Pears

1Place ham slices in a large skillet and cook both sides, 2-3 minutes per side, over medium heat. Remove ham from pan and set aside.

2Reduce heat to low and carefully add butter, bourbon, and brown sugar. Mix together and add pear slices. Cook together, gently stirring for a few minutes until sauce thickens. Return ham slices to pan and coat with bourbon-glaze.

3Remove waffles carefully from waffle iron and top with glazed ham and pears. Pour remaining bourbon-glaze on top and serve immediately.
