Cinnamon Apple Oatmeal

  • 4 Tablespoons Challenge Spreadable Butter with Avocado Oil, divided
  • 2 apples, peeled and diced
  • 2 Tablespoons brown sugar
  • ¾ teaspoon ground cinnamon, divided
  • Kosher salt
  • 2 Tablespoons maple syrup
  • 2 cups whole milk
  • 2 cups whole rolled oats

    Melt 2 tablespoons Challenge Spreadable Butter in a medium skillet set over medium-high heat. Add apples, brown sugar, ¼ teaspoon cinnamon and a pinch of salt. Cook, stirring often, until apples are tender and syrupy, about 5 minutes. Transfer ¼ cup of apples to large saucepan. Stir maple syrup in to remaining apples and set aside for topping.

    Combine whole milk, 1 cup water, oats, ¾ teaspoon kosher salt and remaining ½ teaspoon cinnamon to saucepan with apples. Bring to a boil, reduce to a simmer and cook until oats are tender and mixture has thickened, about 10 minutes.

    Divide oatmeal across 4 shallow bowls. Spoon reserved apple mixture over top and finish with a smear of Challenge Spreadable Butter.
