  • ¼ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • ½ teaspoon Dijon mustard
  • salt, to taste
  • ground black pepper, to taste
  • 1 head lettuce, chopped
  • 1 cup corn, fresh or frozen
  • ¼ cup red onion, chopped
  • ¼ cup red bell pepper, diced
  • ¼ cup green bell pepper, diced
  • ¼ cup cucumber, seeded and diced
  • 1 tomato, seeded and diced
  • Mrs. Cubbison’s Butter & Garlic Croutons made from Texas Toast

Directions

    In a small bowl, whisk together olive oil, vinegar, mustard, salt and pepper.

    In a large bowl, mix lettuce, corn, onion, bell pepper, cucumber and tomato.

    Pour in the dressing and toss to combine.
