Buttery Sweet Pepper Crostini

  • 1 cup (2 sticks) Challenge Butter, divided
  • 1 red pepper, sliced thin (about 1¼ to 1½ cups)
  • 1 yellow pepper, sliced thin (about 1¼ to 1½ cups)
  • 1 orange pepper, sliced thin (about 1¼ to 1½ cups)
  • 1 sweet onion, sliced thin (about 1½ cups)
  • 3 Tablespoons brown sugar
  • ¼ teaspoon salt
  • 1 large baguette, sliced thin (about 48 slices)
  • 8 ounces goat cheese
  • ½ cup fresh basil, chopped

    In a Good Cook, 10-inch skillet, melt ½ cup (1 stick) of butter over medium-high heat. Add red, yellow, and orange pepper slices, onion, brown sugar, and salt. (Pan will seem almost too small initially but the vegetables will quickly lose volume as they soften), Cook until mixture is bubbling, then turn heat down to medium-low and allow onions and peppers to simmer until very soft; most of the liquid will have evaporated and the sauce thickened – about 30 to 40 minutes.

    While peppers are cooking, preheat oven to 400°F.

    Melt remaining ½ cup butter and brush each slice of baguette with butter. Place on a large baking sheet. Bake until golden brown, about 5-9 minutes.

    Spread each baguette slice with goat cheese, top with pepper mixture. Sprinkle with fresh basil just before serving. Enjoy!
