Lemon Butter Drizzle

This is one of those sauces that makes plain steamed veggies taste like a treat. It takes just one Challenge Butter Cube and a lemon—easy enough to pull together while the veggies cook. You can use a steamer basket or just sauté the vegetables in a skillet with a splash of water and cover to steam. I like broccolini, yellow squash, and snap peas, but use what you’ve got.

Ingredients

  • 1 Challenge Butter Cube (4 tablespoons)
  • juice of half a lemon
  • zest of half a lemon
  • salt and pepper, to taste
  • 1 small garlic clove, finely minced or crushed (optional)
  • 1 to 2 teaspoons chopped fresh parsley, chives, or dill (optional)

Directions

    Melt the butter in a small pan or microwave-safe bowl or on the stovetop in a small saucepan.

    Stir in lemon juice, zest, garlic if using, and a pinch of salt and pepper. Add herbs if you like. Taste and adjust seasoning.

    Steam your veggies in a steamer basket or sauté in a pan with a splash of water and cover until just tender.

    Or use a frozen bag of mixed vegetables—just cook according to the package, then toss with the lemon butter drizzle and serve warm.
