White Chocolate Caramel Grilled Cheese with Raspberries and Mango







  • 8 slices brioche bread
  • 6 Tablespoons Challenge Salted Caramel Spreadable Butter, divided
  • 1 cup white chocolate chips
  • 2 mangoes, peeled and sliced
  • 1 cup raspberries

    Arrange 8 slices of bread on a cutting board and spread with Challenge Salted Caramel Spreadable Butter, about ½ tablespoon each.

    Flip 4 of the slices and sprinkle with ¼ cup white chocolate chips. Top with a few mango slices and ¼ cup raspberries. Flip remaining 4 bread slices and spread each with ½ tablespoon Challenge Salted Caramel Spreadable Butter. Place on top of the sandwiches and gently press down to adhere.

    Heat a large skillet over medium-low heat. Carefully transfer a sandwich to the skillet, cover and cook until bread is golden and chocolate is starting to melt, about 5 minutes. Flip the sandwich, re-cover the skillet and cook another 4-5 minutes, until white chocolate is fully melted and bread is golden brown. Transfer to a plate and serve hot. Repeat with remaining 3 sandwiches.
