Ingredients
- 4 Tablespoons Challenge Spreadable Butter
- ⅛ teaspoon cayenne pepper (optional)
- 1 cup chopped onions
- 1 cup sliced red bell pepper
- 4 cups unpeeled, ⅛-inch sliced zucchini, (about 1 pound)
- ¼ teaspoon finely minced fresh rosemary leaves
- ¾ teaspoon chopped or whole fresh thyme leaves
- ½ teaspoon salt or to taste
Directions

1Melt butter in a 10½-inch sauté-pan over medium heat and stir in cayenne pepper.

2Add onions, red bell pepper, zucchini and herbs to pan. Sauté until vegetables are tender (about 5 minutes).

3Add salt to taste. Serve.
