Ingredients

  • 4 Tablespoons Challenge Spreadable Butter
  • ⅛ teaspoon cayenne pepper (optional)
  • 1 cup chopped onions
  • 1 cup sliced red bell pepper
  • 4 cups unpeeled
  • ⅛-inch sliced zucchini
  • (about 1 pound)
  • ¼ teaspoon finely minced fresh rosemary leaves
  • ¾ teaspoon chopped or whole fresh thyme leaves
  • ½ teaspoon salt or to taste

Directions

    Melt butter in a 10½-inch sauté-pan over medium heat and stir in cayenne pepper.

    Add onions, red bell pepper, zucchini and herbs to pan. Sauté until vegetables are tender (about 5 minutes.)

    Add salt to taste. Serve.
