Snappy Ginger Apple Crisp

Apple Crisp with fresh ginger root and a hint of spice.

Topping

  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • ¾ teaspoon ground cinnamon
  • 6 Tablespoons Challenge Butter, cut into ½-pieces, softened
  • ½ cup old fashioned oatmeal

Filling

  • 2 Tablespoons finely chopped fresh ginger root
  • ½ cup granulated sugar
  • ¾ teaspoon ground cinnamon
  • ⅛ - ¼ teaspoon red pepper
  • 3 Tablespoons corn starch
  • 6 cups sliced apples; Peeling apples is optional (6 to 8 apples)

Topping

    Combine flour, sugars, and cinnamon in large bowl (or food processor bowl).

    Cut in butter cubes until mixture forms large clumps. (In food processor pulse 8 to 10 times.)

    Stir in Oatmeal and set aside.

Filling

    Preheat oven to 375°F. In a small bowl combine sugar, cinnamon, red pepper and cornstarch; set aside.

    Combine apple slices and chopped ginger root. Stir in sugar/cornstarch mixture. Spread apple mixture in a 9-inch square baking pan.

    Sprinkle topping evenly over the apples. Bake for 45 minutes or until apples are bubbly and the topping is golden brown.
