If you were to ask me what my favorite seafood is, it would be shrimp. I love them for a few reasons. One, they’re super quick to make, they’re versatile, and they also taste great!

I especially love a good shrimp scampi. The garlic butter sauce that’s infused with just a hint of lemon… it’s to die for! I always serve it with a side of garlic bread, so I thought, why not combine the two?

This super easy weeknight dinner is perfect for busy families, who love good food without the fuss. Using a store-bought loaf of French bread as the base to our pizza is a great way to save time in the kitchen. But when you spread your own homemade garlic butter featuring Challenge Butter, it won’t taste like a shortcut, but rather a creamy buttery dream!

The shrimp is cooked in a garlic and butter sauce before being placed on top of the garlic bread. Sprinkle on a good amount of Parmesan cheese and bake it until the bread is crispy and cheese is melted. If you want it even cheesier, you can add a few slices of fresh mozzarella underneath the shrimp scampi. Heaven!

Garlic Bread


  • 1 French Bread Loaf, any variety, sliced into two halves

  • 4 tablespoons Challenge Butter, softened

  • 2 cloves garlic, pressed

  • 1 tablespoon freshly chopped parsley

Shrimp Scampi


  • 1 tablespoon olive oil

  • 2 Tablespoons Challenge Butter

  • 2 cloves garlic, pressed

  • 1 pinch crushed red pepper flakes

  • 1 pound medium/large shrimp, peeled and tails removed

  • ¼ cup chicken broth

  • 2 Tablespoons lemon juice

  • Salt and Pepper to taste

  • 1 tablespoon freshly chopped parsley

  • 1 teaspoon lemon zest, optional

  • 1 cup grated Parmesan cheese

    Preheat oven to 400°F.

    Combine the 4 tablespoons of Challenge Butter, pressed garlic and parsley in a small bowl and use a fork to combine. Spread the butter over the two open faced sides of the garlic bread. Bake for 10 minutes.

    Meanwhile heat a large skillet over medium heat and add the olive oil, Challenge Butter, pressed garlic, crushed red pepper flakes and the shrimp. Cook the shrimp until they turn pink and begin to curl in (about 4 to 5 minutes). Add in the chicken broth, lemon juice, salt and pepper. Sprinkle with the parsley and lemon zest if desired.

    Spoon the shrimp on top of each of the open-faced garlic bread, then sprinkle the Parmesan cheese over top. Bake for an additional 5 to 7 minutes, or until the bread is crispy and the cheese is melted. Sprinkle with additional chopped parsley and lemon zest if desired. Enjoy!
