Ingredients
- 1 pound boneless skinless chicken thighs cut into small pieces
- 2 Tablespoons cornstarch
- 1 Tablespoon olive oil
- 1 Tablespoon Unsalted Challenge Dairy Butter
- 1 teaspoon chili powder
- ¾ teaspoon salt, more or less to taste
- ½ teaspoon black pepper
- ½ Tablespoon minced garlic
- 1 teaspoon red pepper flakes optional
- 2 to 4 Tablespoons honey, to taste
- 2 Tablespoons cilantro finely chopped
- ½ Tablespoon rice vinegar
- 2 Tablespoons Challenge Unsalted Butter
- chopped cilantro or green onions for garnish

In a bowl, add the chicken that has been cut into small pieces along with the cornstarch. Mix so that each piece of chicken is coated evenly in the cornstarch.

Heat a skillet over medium-high heat. Add the olive oil and Challenge Dairy Unsalted Butter.

Toss in the chicken and sprinkle salt and pepper on top. Cook until the chicken has some browned bits and no pink in sight, about 5 minutes.

Add the minced garlic, red pepper flakes, honey, cilantro, rice vinegar, and more unsalted butter.

Sauté until the chicken is golden brown and coated in the thick sauce, about 3 to 4 minutes.
