I never realized just how delicious and easy it is to grill oysters. My friend Chef Chris Sherrill from Salt Restaurant showed me just how easy it is to do.
Fresh oysters are poached in European butter that is infused with fresh garlic, rosemary and green onions. A sprinkle of cheese finishes this easy recipe. A great appetizer to make on the grill.

Ingredients
- 1 stick (8 Tablespoons) Challenge Butter
- ¼ cup green onion, diced
- 2 sprigs fresh rosemary
- 1 dozen fresh oysters, shucked
- 2 cloves garlic, crushed
- ⅛ cup Parmesan cheese, grated
- ⅛ cup white wine
- 1 loaf crusty French bread, cut in half

Preheat grill to high. If you would like to use your oven, preheat on broiler setting.

Add a tablespoon of butter to each well in the Oyster Bed. Place pan on hot grill or under broiler until butter begins to brown.

Add two oysters to each well to poach in the butter. Sprinkle on green onions, garlic and add sprig of rosemary to infuse butter with flavor. Cook oyster for 2 minutes.

Remove from heat and sprinkle with parmesan cheese and wine. Cover grill, or place under broiler to melt cheese, about 1-2 minutes.

While oyster are cooking, place French bread on grill or under broiler to toast.

Remove oyster from heat and serve with your toasted French bread.

Although we prefer using The Oyster Bed you can cook shucked oysters in their shells, or even use a cupcake pan.
