Butterhorns make great cookies, but they also make great dinner rolls by simply rolling them like a crescent roll or croissant. These no knead, overnight rise rolls are soft, warm, and perfect for any gathering! Mix the dough the night before you want to bake them, and they’ll be ready to roll, shape and bake in the morning!

  • ½ cup granulated sugar (100 grams)
  • 1 package instant or active dry yeast (¼ ounce)
  • 3 large eggs, beaten
  • 1 cup (8 ounces) lukewarm water (110-115ºF)
  • 8 Tablespoons Challenge Dairy Butter, melted but cooled to 110-115º F
  • ¾ teaspoon salt
  • 4 ½ cups all-purpose flour (585 grams)

  • 8 Tablespoons Challenge Dairy Butter, melted

  • 1

In a large glass mixing bowl, whisk together the sugar, yeast and eggs.

  • 2

Add the water, butter, and salt. Mix again.

  • 3

Add 2 cups of flour. Mix by hand or with a hand mixer on medium low speed until smooth.

  • 4

Add the remaining flour ½ cup at a time to form a soft dough. The dough should be very sticky, almost like a thick batter instead of a kneadable dough.

  • 5

Cover the bowl with plastic wrap and place in the refrigerator overnight.

  • 6

The next morning, remove the dough from the bowl, divide dough in two equal portions and place on a floured surface.

  • 7

Flour the top of the dough balls, your hands and the rolling pin.

  • 8

Roll each dough ball into a 12” circle.

  • 9

Use a pizza cutter to cut 12 triangles. You should have a total of 24 rolls.

  • 10

Roll up each wedge starting at the wide end and rolling towards the narrow end.

  • 11

Place 2-3” apart on a parchment or silicone lined baking sheet.

  • 12

Allow the rolls to rise until nearly double, about 2-3 hours.

  • 13

Preheat the oven to 400º Fahrenheit.

  • 14

Brush the top of each roll with the melted salted Challenge Dairy Butter.

  • 15

Bake for 10-11 minutes or until golden brown.

  • 16

After the rolls come out of the oven, immediately brush them with salted Challenge Dairy Butter again.

  • 17

    Serve immediately.

  • 18

Store any leftovers in an airtight container at room temperature.
