Raspberry Sandwich Butter Cookies
- 1 cup (2 sticks) Challenge Butter, softened
- 2 cups all-purpose flour
- ½ cup sugar
- 1 cup finely chopped walnuts
- 1 cup raspberry jam
Preheat oven to 350° F.
Mix all ingredients thoroughly, except jam.
Roll dough ¼-inch thick on lightly floured cloth covered board. Cut into 1½ inch circles. Place on ungreased baking sheet.
Bake 10-12 minutes.
When cool, spread 1 teaspoon jam on the bottom of one cookie and press another cookie bottom to the jam creating a sandwich.
