Scottish Scones with Honey Butter

Scottish Scones

  1. 1 ½ cups all-purpose flour
  2. ¼ cup sugar
  3. 1 Tablespoon baking powder
  4. ½ teaspoon salt
  5. ½ cup (1 stick) Challenge Butter
  6. ¾ cup quick cook oats
  7. ⅓ cup walnuts, chopped
  8. ½ cup milk

Honey Butter

  1. ½ cup Challenge Butter, softened and mixed with ¼ cup honey

    Combine flour, sugar, baking powder and salt in a large bowl. Cut in butter with a pastry cutter or two knives until mixture resembles coarse crumbs.

    Stir in oats and nuts.

    Add milk, mixing just until moist.

    On lightly floured surface, roll dough into a circle one-half inch thick. Cut into 10 wedges. Place on greased cookie sheet.

    Bake in a 425°F oven for 12-15 minutes. Serve with Honey butter or Strawberry butter.

These scones are not as sweet as my usual recipe but I love the walnuts in them and they are yummy with the honey butter. My daughter didn't like them quite as well.
