Chicken Lettuce Wraps

Seasoned chicken cooked in a delicious ginger sauce and wrapped in individual lettuce leaf then generously topped with wonton strips.

Ingredients

Ginger Sauce Mixture

  • ¼ cup hoisin sauce
  • 2 Tablespoons soy sauce
  • ½ cup diced red bell peppers
  • 2 scallions, washed and chopped
  • 2 teaspoons fresh minced garlic
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon red pepper flakes
  • freshly ground black pepper

Wraps

  • 4 boneless, skinless chicken breasts, diced into cubes
  • fresh ground pepper
  • 2 Tablespoon Challenge Spreadable Butter
  • 1 large head butter lettuce, washed and drained, leaves separated and patted dry
  • 1 bag (4 ounces) Mrs. Cubbison’s Authentic Wonton Strips

Ginger Sauce Mixture

    In a small bowl, combine all ginger sauce ingredients. Blend well.

    Season chicken on both sides with ground pepper before dicing. In a large skillet, over medium-high heat, heat oil until hot. Carefully add chicken and cook until juices run clear and the chicken is no longer pink inside (about 5 to 7 minutes.)

    Stir sauce mixture into chicken. Continue cooking until heated through and flavors have blended into the chicken (about 1 to 2 minutes); stir continuously. Remove skillet from heat.

Wraps

    Arrange lettuce leaves on a platter. Place a heaping spoonful of ginger chicken into the middle of each lettuce leaf. Generously top with Mrs. Cubbison’s Authentic Wonton Strips. Serve immediately. Just fold, wrap and eat.
