Mini Everything Butter Potato Skins

Making these potato skins is largely a hands-off job thanks to time in the oven and a savory burst of flavor from Challenge Everything Butter Snack Spread. A sprinkling of bacon and chives at the end seals the deal.

  • 1½ pounds baby yellow potatoes, scrubbed
  • 1 Tablespoon olive oil
  • ¼ cup Challenge Everything Butter Snack Spread
  • kosher salt and black pepper
  • 6 bacon slices, cooked and crumbled
  • 2 Tablespoons chopped fresh chives

    Preheat oven to 375°F. Place potatoes on a foil-lined sheet pan and toss to coat with olive oil. Bake for about 30 minutes, flipping halfway, until cooked through and crispy. Set aside to cool completely. Increase oven temperature to 450°F.

    Slice potatoes in half lengthwise. Use a small spoon to gently scoop out potato flesh, leaving a 1/8-inch border near the skin.

    Place Challenge Everything Butter Snack Spread in a small heat-safe bowl and microwave for 15 seconds, until just melted. Brush all over the potato shells and arrange cut-side down. Season with salt and pepper.

    Bake skins for 10 minutes, then carefully flip potatoes. Brush inside with more softened Challenge Everything Butter Snack Spread and bake another 10 minutes. Turn on broiler and cook 1-2 minutes, watching closely, until potatoes are crispy and browned on the edges.
