Smoked Salmon, Tomato and Everything Butter Grilled Cheese

  • 8 slices rye bread
  • 8 Tablespoons Challenge Everything Snack Spread, divided
  • 8 ounces fresh goat cheese, softened
  • 8 ounces smoked salmon
  • 1 large tomato, sliced
  • ½ red onion, thinly sliced
  • 1 cup arugula

    Arrange 8 slices of bread on a board and spread with Everything Snack Spread, about 1/2 tablespoon per slice.

    In a medium bowl, use a spoon to mash and mix remaining 4 tablespoons Everything Snack Spread with goat cheese until smooth and combined. Flip half the slices and spread each with goat cheese mixture.

    Layer each with smoked salmon, tomato, red onion and arugula. Top with remaining bread slices, buttered side up.

    Preheat a large skillet over medium heat. Carefully transfer one sandwich to the skillet, cover and cook until bread is golden, 3-5 minutes. Flip and cook another 3-5 minutes. Repeat with the remaining 3 sandwiches. Serve hot.
