No-Bake Strawberry Granola Bites

No-bake bites offer big flavor and big energy without ever having to turn the oven on. Sound too good to be true? These bite-sized wonders come together in a flash, and can chill in the fridge until you need a berrylicious boost.

Ingredients

  • ½ cup Challenge Vanilla Fudge Butter Snack Spread, softened
  • 3 Tablespoons almond butter
  • 1 ½ cups instant oats
  • ½ cup shredded coconut
  • ½ cup freeze-dried strawberries, crushed into ¼-inch pieces

Directions

    In a medium bowl, combine Challenge Vanilla Fudge Butter Snack Spread, almond butter, instant oats and shredded coconut. Stir until well combined.

    Mix in freeze-dried strawberries and let sit 20 minutes.

    Scoop 1 Tablespoon-sized portions onto a baking sheet, gently squeeze to compress, then roll into smooth balls. Store in the refrigerator.
