Lemon Popcorn Balls

The MVP ingredient in this fun Halloween popcorn ball is our Lemon Butter Snack Spread, which flavors and helps bind the popcorn and candies along with the marshmallows. It’s like a crispy rice bar, only more complex—and more decadent.







  • ¼ cup Challenge Lemon Butter Snack Spread
  • 10 ounces mini marshmallows
  • ½ teaspoon kosher salt
  • 12 cups popped popcorn (½ cup kernels), picked over
  • ½ cup Halloween sprinkles, plus more for decorating
  • ½ cup small Halloween candy

    Line a baking sheet with parchment and set aside.

    Combine Challenge Lemon Butter Snack Spread, marshmallows and salt in a large pot over low heat. Stir until melted.

    Remove from heat. Add popcorn and stir until completely coated. Let cool 2-3 minutes, then stir in sprinkles and candy.

    With buttered hands, shape and press the mixture into 3-inch balls.

    Place on the prepared baking sheet and repeat until all the popcorn has been used. Insert a colorful straw into the top, if desired.

    Let popcorn balls sit for at least 1 hour to firm up. To store, wrap each popcorn ball in plastic wrap.
