Orange and Honey Cheesecake with Vanilla Crust

It’s back to school, but summer is not over yet! With calendars filling up, it's always good to have a quick and easy recipe on hand for picnics, birthday parties or backyard get togethers. This no-bake Orange & Honey Cheesecake with Vanilla Crust only takes a few easy ingredients and about 15 mins of prep time. The flavor pairing of orange, honey and vanilla is one of my favorites, give it a try if you haven’t already!

Crust

  • 2 cups vanilla wafers, crushed

  • ½ cup quick oats

  • ⅔ stick Challenge European Style Unsalted Butter, melted

Filling

  • 2 packages Challenge Cream Cheese (8oz each)
  • 1 pack gelatin

  • ¼ cup granulated sugar

  • ¼ cup honey

  • Zest and juice from 4 Valencia oranges (or regular naval oranges)


Directions

  • 1
    To make the crust, grind the crushed vanilla wafers and quick oats in a food processor for about 1 minute. Add the melted butter and stir until well combined.

    Pour the mixture into the spring pan and push down to compress the crumbs with a pie or coffee tamper, or the bottom of a glass.

    Refrigerate for at least 1 hour.

    In a small sauce pan, bring the orange juice, honey, and sugar to boil. Add the gelatin.

    Pour the cream cheese mixture slowly over the vanilla wafers and refrigerate for at least 2 hours until the cream cheese mixture has set.
 Serve chilled and keep in the refrigerator for up to 3 days.
