Ooey Gooey Lemon Butter Cookies

Imagine my surprise when I found out I could get all of the flavor and texture of a classic “Ooey Gooey Butter Cake” in a delicious cookie. I was even more thrilled, once I found out how easy they are to make. I start with a cake mix, and then blend in Challenge Butter and Cream Cheese, no mixer required. To really make these cookies shine, I added a punch of fresh lemon flavor. You will enjoy every bite of these cookies. Celebrate the freshness of lemon, and the joy that butter and cream cheese can bring to a cookie!


  • 8 ounces Challenge Cream Cheese, softened
  • ½ cup (1 stick) Challenge Butter, softened
  • 2 teaspoon vanilla extract
  • 1 teaspoon lemon oil
  • 2 tablespoons fresh lemon zest
  • 1 whole egg
  • 1 egg yolk
  • 1 super moist lemon cake mix
  • ½ cup powdered sugar

    Preheat oven to 375 degrees.

    In a large mixing bowl, stir together cream cheese and butter.

    Stir in vanilla, lemon oil, lemon zest and eggs.

    Stir in Cake mix, mixing until all ingredients are well incorporated.

    Line baking sheets with parchment paper. Using a 1 inch cookie scoop, measure out dough, place on parchment paper 2 inches apart.

    Using a drinking glass, slightly flattened out cookies. Spray glass with cooking spray if dough begins to stick.

    Dip each cookie in powdered sugar and place back on cookie sheet.

    Bake cookies for 10-12 minutes. Cookies should still be slightly soft in the center.

    Remove cookies and place on a cooling rack. Sprinkle with additional sugar if desired before serving.
