Snappy Ginger Apple Crisp

Apple Crisp with fresh ginger root and a hint of heat.

Ingredients

Topping

  1. ½ cup all-purpose flour
  2. ¼ cup granulated sugar
  3. ¼ cup light brown sugar
  4. ¾ teaspoon ground cinnamon
  5. 6 Tablespoons Challenge Butter, cut into ½-pieces, softened
  6. ½ cup old fashioned oatmeal

Filling

  1. 2 Tablespoons finely chopped fresh ginger root
  2. ½ cup granulated sugar
  3. ¾ teaspoon ground cinnamon
  4. ⅛ - ¼ teaspoon red pepper
  5. 3 Tablespoons corn starch
  6. 6 cups sliced apples; Peeling apples is optional (6 to 8 apples)

Directions

Topping

  1. Step 1

    Combine flour, sugars, and cinnamon in large bowl (or food processor bowl).

  2. Step 2

    Cut in butter cubes until mixture forms large clumps. (In food processor pulse 8 to 10 times.)

  3. Step 3

    Stir in Oatmeal and set aside.

Filling

  1. Step 1

    Preheat oven to 375°F. In a small bowl combine sugar, cinnamon, red pepper and cornstarch; set aside.

  2. Step 2

    Combine apple slices and chopped ginger root. Stir in sugar/cornstarch mixture. Spread apple mixture in a 9-inch square baking pan.

  3. Step 3

    Sprinkle topping evenly over the apples. Bake for 45 minutes or until apples are bubbly and the topping is golden brown.

This was a hit with my husband who likes the heat from the ginger -- he also likes oats. I reduced the sugar. This is the first time I have cooked with fresh ginger.

This was a delicious recipe.

Wow! Loved this recipe:easy to prepare using ingredients from your pantry. It's tasty and unique with the additions of the pepper and ginger. This will be a staple in my collection of desserts. It's great served warm with a scoop of ice cream.
