Apple Buckle

Apple Buckle is a streusel-topped cake packed with tart apples. It can be enjoyed any time as dessert or at brunch with a fresh roasted cup of coffee.

Ingredients

Topping

  1. 6 Tablespoons all-purpose flour
  2. ½ cup light brown sugar
  3. ¼ teaspoon ground cinnamon
  4. ¼ teaspoon salt
  5. ½ cup (1 stick) Challenge Unsalted Butter
  6. ½ cup chopped walnuts

Cake

  1. 1½ cups all-purpose flour
  2. 1½ teaspoons baking powder
  3. ½ cup (1 stick) Challenge Unsalted Butter
  4. 1 cup sugar
  5. ½ teaspoon ground cinnamon
  6. ¾ teaspoon salt
  7. 2 eggs
  8. 1 teaspoon vanilla
  9. 4 cups peeled, cored and chopped apples

Directions

Topping

  1. Step 1

    Combine flour, brown sugar, cinnamon and salt.

  2. Step 2

    Cut in butter until mixture resembles coarse crumbs.

  3. Step 3

    Stir in nuts and set aside.

Cake

  1. Step 1

    Preheat oven to 350°F.

  2. Step 2

    Butter a 10-inch round spring-form pan (or a 9-inch square baking pan).

  3. Step 3

    Whisk together flour and baking powder and set aside.

  4. Step 4

    Cream together butter, sugar, cinnamon and salt until light and fluffy. Blend in eggs and vanilla.

  5. Step 5

    Gradually blend in flour mixture.

  6. Step 6

    Stir in apples.

  7. Step 7

    Transfer batter to prepared pan. Sprinkle topping evenly over apple mixture.

  8. Step 8

    Bake 45-50 minutes or until wooden skewer inserted into center of cake comes out clean.

  9. Step 9

    Allow to cool 15 minutes and remove sides of pan. Serve warm or at room temperature.

I made this for a special dinner and it turned out amazingly well!. I used a 10in glass pie dish. I didn't think there was enough batter while I was making it but that's the way it is supposed to be. It looks like batter coated apple chunks at first, but bakes into a beautiful and tasty dessert! Thanks so much!!!
