Puffy Baked Apple Pancake

This delicious recipe produces light, puffy pancakes that make your mouth water as you pull them out of the oven.

Ingredients

  1. ¼ cup (½ stick) Challenge Unsalted Butter
  2. 3 large eggs
  3. ¾ cup all-purpose flour
  4. ¾ cup milk
  5. 1 Golden Delicious apple
  6. ¼ cup brown sugar
  7. ½ teaspoon cinnamon
  8. 2 Tablespoons fresh lemon juice

Directions

  1. Step 1

    Preheat oven to 425°F.

  2. Step 2

    Cut apple into thin slices and toss slices with brown sugar, cinnamon and lemon juice.

  3. Step 3

    Melt butter in a large ovenproof frying pan, wok, or paella pan until the butter is just melted (3-4 minutes.).

  4. Step 4

    In a blender or food processor, blend the eggs, milk and flour at high speed until smooth and well blended. Pour the batter into the pan of melted butter.

  5. Step 5

    Arrange the apple slices in a spoke-like pattern in the center. Bake for 15-20 minutes or until puffed and golden brown. Serve immediately with maple syrup.
