I am always looking for a quick meal for busy weeknights. Between soccer practices, homework and laundry there isn’t a whole lot of time leftover for meal planning and preparation!

I try to be good every Sunday and work out my week in advance, but even the best-intentioned people don’t always pull it off.

Anyhow, I have found a new favorite meal in this Buttery Lemon Spaghetti. Pasta is always a winner in my house, and this pasta is different, packed with flavor and a huge favorite of mine!

It only takes a few minutes to get everything together…honestly you can do everything you need to do while the pasta is boiling. SO basically what I am saying is this can be made in less than 20 minutes, easily!

Using Challenge Butter in this recipe really works with the citrus in the lemon well…you get both tangy and rich. Of course I like to add extra cheese to make the whole meal come together.

There is so much flavor packed into this little meal I know you will love it as much as I do!

Ingredients


  • 1-pound spaghetti

  • 6 tablespoons Challenge Butter

  • 3 cloves garlic, minced

  • ½ teaspoon crushed red pepper flakes

  • ¼ cup heavy cream

  • 1 cup fresh grated Parmesan Cheese

  • ⅓ cup fresh chopped parsley

  • zest of 2 lemons

  • juice of 1 lemon

  • salt and pepper to taste

  • extra Parmesan

Directions

    Boil pasta according to package directions.

    When the pasta is almost done melt butter in a large deep skillet over medium heat. Once the butter is melted add in the garlic and red pepper flakes. Cook for one minute. Whisk in the heavy cream.

    Drain the pasta and add it immediately into the butter mixture, coating the pasta evenly.

    Add in the Parmesan cheese, parsley, lemon zest and lemon juice stirring to evenly incorporate. Season with salt and pepper.

    Serve immediately.

    Garnish with extra Parmesan Cheese if desired.
